About the Job:
An exciting opportunity has arisen for a talented Sous Chef to join the Culinary team at the Burj Al Arab. The main purpose of this role is to ensure the smooth operation of the department in charge by optimizing the use of all kitchen materials and manpower, thereby maximizing revenue and guest satisfaction and expectation.
Your key duties will include:
- To ensure that the kitchen operation runs smoothly and effectively.
- To ensure that all outlet reports, schedules, standard recipes, menus, food presentation photographs and correspondence are completed in liaison with the Head Chef and Chef de Cuisine in an accurate and punctual manner.
- To have a complete understanding of, and adhere to the company’s policy relating to fire, hygiene and safety.
- To ensure that operating and kitchen equipment is maintained to a good standard with minimum breakage.
- Check incoming produce, ensuring that all food merchandise is in accordance with order sheets, receiving records and purchasing specifications.
- To maximize colleague productivity and morale and consistently maintain discipline following hotel guidelines and local legislation.
- To liaise with the Stewarding Manager in order to ensure high standards of cleanliness are maintained in all areas of the kitchen, such as machinery, small Kitchen equipment, floors and fridges.
- Responsible for the audit requirements for HACCP and Dubai Municipality as needed.
- Assists in the building of an efficient team of colleagues by taking an active interest in their welfare, safety, training and development.
- Interacts with management of other departments within areas of responsibility and develops solid working relationships with them.
About You:
In order to be considered for this role, you will have gained secondary school/university and or management certificate program. You will have at least 2 years' experience as Sous Chef in a 5 star hotel.
This is a very "hands on" and demanding position so it is paramount that you work well in a team but are also able to set standards and lead by example at all times. You must be comfortable working under pressure.
You will have strong written and verbal English skills as well as a good working knowledge of Microsoft Office as strong communication skills are required.
